Tortilla Soup

INGREDIENTS A

  • 8 cups water or broth
  • 2 cups pinto or black beans
  • 1 tsp. salt (adjust to taste)
  • 2 heaping tbsp. red chili powder (adjust to taste)
  • 1 chopped or whole onion
  • 4 cloves garlic
  • 1 tsp. dried oregano flakes
  • 1 heaping tsp. cumin
  • 2 dried bay leaves

INGREDIENTS B

  • 1 can corn
  • 1 can hominy or 1 cup cooked rice (brown or white)
  • 1 cup zucchinis
  • 1 cup carrots
  • 1 cup celery
  • 1 can diced tomatoes

INGREDIENTS C

  • crumbled tortilla chips
  • lemon/lime wedges
  • chopped or dried green onions
  • chopped or dried cilantro
  • cheese (or substitute)
  • sour cream (or substitute)

DIRECTIONS

  1. Boil Ingredients A together in a large covered pot for about 3.5 hours. (Add water as necessary).
  2. Add Ingredients B and boil for 10-15 mins. (Add water as necessary).
  3. Garnish with any/all from Ingredients C.
